NoButcher, Vegas’ first and only vegan butcher and deli, has been up and running since October 2019. We bopped over back then to give you the exclusive look at their soft opening. Now we’re back to show you what Sebastian Mueller, Alecia Ghilarducci, and the team are cooking up seven days a week at NoButcher,  Las Vegas’ only vegan deli.

This hot spot for all things deli not only has brunch, meat-stuffed sandwiches, deli goodies perfect for a picnic or party, they’ve also got brunch and even have a drive-thru. Yeah, Vegas, you’re lucky.

The sandwich that started it all, the Pulled NoPork Sandwich is on the menu (obviously). The hand-pulled NoPork with barbecue sauce and maple-mustard coleslaw comes stuffed into a ciabatta roll. Hand-pulled because the devices and machines to pull it out didn’t live up to Mueller and Ghilarducci ‘s standards, NoPork is a labor of love and treats diners to the perfect pulled texture.

Also on the menu is the Aloha NoRibs Sandwich. Topped with cabbage, tomatoes, cucumber, red onion, pineapple, and cilantro, the sandwich is a mouthful. The Hawaiian style compliments the NoRibs perfectly.

If you prefer a hot sandwich without mock meats, try the Mediterranean Roasted Veggie Sandwich. The roasted veggies include peppers, zucchini, mushrooms, onions, and garlic with tomatoes, fresh rosemary, and fresh basil. The sandwich is topped with house-made almond NoFeta cheese and placed on a crispy ciabatta roll, or optionally, a soft, almost pillowy, gluten-free bun. It’s been hard to find a good roasted veggie sandwich in Vegas, but now there’s a go-to option!

In addition to hot sandwiches, NoButcher currently has three classic cold sandwiches: NoTuna Chickpea Salad, NoEgg Tofu Salad, and the Italian Cold Cut. Both the NoTuna and NoEgg are served on a ciabatta roll and topped with tomato, cucumber, lettuce, and red onion and can be easily made gluten-free with a swap of buns. Lucky for us, these tasty salads are also available by the pound at the deli counter.

The Italian Cold Cut, composed of NoTurkey and NoPepperoni (guys, this pepperoni is no joke – grab the recipe!) with lettuce, tomato, onion, and a special garlic-herb cream cheese, is generously piled on a crispy ciabatta roll. What’s better than a 6” Italian Cold Cut? A party-sized version that feeds six people! Make sure to contact the deli ahead of time for this special request.

And although your large sandwich is going to be satisfying enough, believe us when we tell you that you’re going to want to order a side. Find the classic deli comforts in the glass cabinet such as potato salad, lentil salad, and a spring salad option. Now ask yourself, when is the last time you had a good, creamy, classic (vegan) potato salad?

Recently, weekend brunch specials have been added into the mix between the hours of 11 a.m. and 2 p.m. The Las Vegan vegan brunch menu includes hot Starbucks coffee, homemade cinnamon rolls, and breakfast sandwiches. Choose from an English muffin stuffed with tofu scramble, cheesy sauce, NoBacon and/or NoSausage or The Big Ciabatta: a toasted 6” ciabatta, tofu scramble, roasted veggies, cheesy sauce, NoBacon, and NoSausage.

Can’t get enough of NoButcher’s vegan meats and cheeses? You’re in luck. You can bring your favorites home! The deli cabinet has items like NoRibs, NoPepperoni, NoMozzerella, Marble Wine Cashew Cheese Balls, and more.
