Daikon Vegan Sushi & More soft opens on Monday, Dec. 14. It’s opening marks the second all-vegan sushi restaurant to open in Las Vegas. The upscale Chikyū, one of the best places to get vegan sushi in Las Vegas, opened Spring 2020. The Asian fusion fast-food restaurant is open for to-go and delivery only right now.
Las Vegas Vegan Restaurant: Daikon Vegan Sushi
Daikon is brought to Las Vegas by the cooking team behind My Ramen in Denver. At the helm of the restaurant is Chef Mindy Lim, who has created a diverse menu.
Appetizers at Daikon include the typical miso soup and edamame, but also unique eats like kinpira gobo. The cold dish features stir-fried burdock root and carrots, topped with sesame seeds and sesame oil. Other standouts include salt and pepper calamari (King Oyster mushrooms) and tempura-fried jalapeños stuffed with spicy jackfruit.
When it comes to sushi, Daikon has rolls you can find across town like California, avocado and cucumber. But, they also offer some specialty rolls we’ve never seen before.
For example, there’s the Bulgogi roll. This comes filled with oyster mushrooms, carrots, white onions and cucumber and topped with green onions, and a sweet soy and chili sauce.
There’s also the Lucky Red Roll. It’s stuffed with jackfruit salad and cucumber and tossed with roasted tomato, la-yu (Japanese chili oil), sweet soy and green onions.
They have a nigiri menu with standouts like the roe pocket made with carrot juice and algae and served in an inari pocket.
In keeping with the Asian fusion, Daikon serves main courses like tonkatsu made with panko-fried tofu skin. Other main courses include Bulgogi featuring a smattering of different types of mushrooms, carrot and white onions cooked in a sweet, savory sauce; sesame chicken (fried gluten in sweet and spicy sauce) and chicken and rice.
For dessert, choose from a tapioca coconut cake or fried banana with sticky rice wrapped in lumpia and topped with chocolate sauce and powdered sugar.
It doesn’t end there.
Daikon also offers smoothies and fresh juices.
