More and more vegan Mexican options in Las Vegas are popping up. The latest to announce a vegan menu is Salud Mexican Bistro and Tequileria.
The Lakes restaurant, which opened less than a year ago, has always had vegan options. But, according to Salud Mexican Bistro’s owner, Stevee Topchi, they didn’t feel like it was enough.
“We wanted to expand our menu to have more vegan options because we wanted to support others [who are] against animal cruelty,” says Topchi. “We know the vegan population has a big impact on this cause that is so dear to us. We knew we have a very talented chef that had already created several unique dishes. We thought this was the perfect opportunity to do our part.”
From a few selections to an entire vegan menu, Salud Mexican Bistro and Tequelieria’s vegan menu now offers a healthy variety of vegan food in Las Vegas.
The menu features a baked banana and beet salad, chile relleno with cactus, grilled veggies and vegan cheese, soyviche, a spinach crust pizza with lima bean paste, vegan mozzarella and grilled veggies.
They’ve also got butternut squash enchiladas, tacos (hibiscus, soy and chipotle mushroom) and more, plus the city’s largest tequila bar with more than 100 offerings.
