Taylor Cummings had the same problem a lot of chocolate lovers have when they switch from vegetarian to vegan: she missed her favorite desserts.
Cummings, who learned to bake at the age of five, took matters into her own hands and created The Cupcave, an all-vegan bakery in Las Vegas with a great tagline — villainous creations with heroic ingredients accompanied by bat logo.
Don’t let the evil vibe fool you though, the baked goods are heavenly.
Las Vegas Vegan Bakery: The Cupcave
Specializing in cupcakes, cookies and scones, The Cupcave opened in June. It offers orders for pick-up and also ships cookies and scones nationwide.

Let’s start with scones. You can enjoy these soft, not-too-sweet treats as a breakfast pastry or dessert. We did both!
First up, the lemon blueberry. The lemon drizzle a top the pastry hits your nose before your first bite. Then, the blueberries that melt in your mouth.
Another option is the cherry almond, a scone packed with lush, tart cherries and slivers of almond.
Cummings likes experimenting with more unique concoctions and offers a lavender/fig scone complete with chunks of fig baked into the pastry.
Finally, there is the strawberry mint version. It comes with fresh berries and a mint-infused glaze.
But, there’s more.
The Cupcave offers holiday-themed treats as well. For example, there’s vanilla bean glazed chocolate skulls for Halloween; pumpkin cookies and chai cupcakes for fall; pumpkin pies for Thanksgiving; plus, candy cane and linzer cookies for Christmas. All vegan, of course.

It’s easy to tell cupcakes are Cumming’s favorite thing to create. The delicate cupcakes come in six flavors — three of which we had the pleasure to sink out teeth into.
Let’s start with the S’mores. It stacks not-too-sweet chocolate cake on a graham cracker crust (of course!) and is topped off with a fluffy marshmallow instead of frosting.
Then, there’s the Almond Joy. It’s the perfect balance of almond, coconut and chocolate. Instead of overpowering each other, the flavors stay in harmony, each melting into your taste buds. Plus, it’s got a gooey center and who doesn’t love one of those? Side note: if you’re a German Chocolate Cake lover, order this!
Last but not least, Cookies n Cream. Piled high with sweet, creamy frosting and a light dusting of cookie crumbles, this chocolate cupcake is decadent. And, surprise! There’s a soft Oreo baked inside!

Cummings her first order of business when starting The Cupcave was working on a classic chocolate chip cookie.
She’s since added a yummy chocolate hazelnut and four additional flavors — double chocolate mint, peanut butter, trail mix and orange cranberry.
