That’s the first thing that comes to mind when walking into the sunken dining room of Giada, a vegan-friendly restaurant in Las Vegas on the Las Vegas Strip. Your eyes travel across the airy, modern decor and finally to the massive floor-to-ceiling windows, exposing an amazing view of the Las Vegas Strip.
You can’t help but think to yourself, “Vegas, baby!”

Las Vegas Vegan-Friendly Restaurant: Giada
Giada is the debut restaurant for celebrity chef and Food Network star Giada De Laurentiis, located inside the adults-only The Cromwell Hotel Las Vegas. Note: the restaurant is open to all ages. It’s California-meets-Italy at this vegan-friendly Las Vegas restaurant.
Vegan options at Giada
The first thing you’ll need to try at Giada are the complimentary rosemary focaccia loaves. Seriously.
These aren’t any dinner rolls; they’re little bites of Italian goodness.
We soak ours in olive oil and herbs – as you should at any Italian restaurant, right? It’s warm, squishy and topped with a touch of sea salt. Heaven.
Then, it’s on the appetizer: marinated olives. The colorful, earthy olives come complete with a whiff of citrus and juniper and a touch of vinegar and salt.
Next, munch on a light and flavorful arugula salad with not-just-any olive oil dressing. This is Luchini olive oil, the only variety allowed in the restaurant.
One of the vegan entrées at GIADA is bucatini with vegan pomodoro sauce, twirled and coiled to perfection. Be sure to specify vegan so they hold the cheeses.
The no-egg pasta soaks up a light Calabrian chile pomodoro sauce with tomatoes, peppers, garlic and carrots — no drowning noodles here! So simple and modern, yet so divine.
The other vegan option for your main course is the eggplant tower. This stack of sliced, oregano-encrusted eggplant baked in the oven comes layered with pomodoro sauce and avocado. (There’s that California influence Giada is known for!)
When it comes to sides, there are also lots of veggie options. Simply let your server know you’re vegan so there’s no cheese or butter.
Try the zucchini served scapece-style with spun golden potatoes and pomodoro sauce.
Finally, save room for gelato for dessert. These aren’t your typical gelato flavors – this is Giada we’re talking about here! The rotating flavors include raspberry chamomile and blackberry merlot.
