EDO Gastro Tapas & Wine

EDO Gastro Tapas & Wine is a vegan-friendly tapas restaurant in Las Vegas. Tucked into a nondescript strip mall off of Spring Mountain, this intimate restaurant is anything but nondescript. In fact, it’s on par with Strip dining in terms of presentation, ambience and dishes.

Named after Chef Oscar Amador Edo, this gastro restaurant specializes in classic Spanish recipes with a modern twist and avant-garde techniques.

The best part? There’s a full vegan tasting menu for only $45 per person.

And this plant-based menu (no fake meat or cheese here) was no afterthought. Chef Edo has designed a menu where each dish is beautifully crafted and full of flavor.

You can also order items a la carte. Our suggestion: order the tasting menu (it’s oh-so-incredible) and add on an order of their version of patatas bravas (think pressed, flakey potato sticks that are likely the most unique version you’ve ever tried).

EDO’s Vegan Tasting Menu

 

The five-course tasting menu begins with green tartare, a refreshing dish of stacked zucchini and avocado with pistachio vinaigrette and micro greens — a prefect dish to awaken your taste buds.

Next, the ensalada de aspáragus, a perfect summer salad that features chilled green asparagus, avocado, melon and a light beluga lentil vinaigrette.

The third dish is the maitake and shemeji mushrooms al ajillo — a showstopper. These roasted mushrooms come in a creamy garlic piu piu sace and are joined by cauliflower chips, and grilled spring onions. This dish is filled with gorgeous flavor (we could seriously eat this as a heaping plate and still want more).

There’s more.

The fourth course is menestra de verduras, that takes your normal veggie dish and raises the bar. This medley comes topped with green curry and a balsamic reduction.

Finally, there’s dessert. 

And this sweet treat is one we are obsessed with. The light and airy strawberry granita features nixtamalizated cherry tomatoes (yup, they’ve turned tomatoes into a dessert), almond yogurt espuma and strawberry granita.

Additional Vegan Dishes at EDO

Other vegan options that aren’t on the tasting menu include paella for two, Spanish focaccia and flakey, crispy patatas bravas like you’ve never seen them before.
