Las Vegas can never have enough Mexican food! We’ve got Mexican vegan restaurants in Las Vegas like El Cactus, Tacotarian, Veganos Kitchen and Pancho’s Vegan Tacos (who are currently expanding to even more locations). But, there are also plenty of vegan-friendly Mexican restaurants in Las Vegas.
The latest to refresh its vegan offerings if Borracha Mexican Cantina, which is a part of the bigger vegan expansion at Green Valley Ranch.
Tucked into a burgeoning vegan corner of the casino near Bottiglia and Hank’s Fine Steaks and Martinis, Borracha is the perfect spot for your Taco Tuesday Crew or a fun night out with your friends.
Order for the table flavorful appetizers such as coconut ceviche with fried plantain chips.
If you’re really hungry, the mountain of vegan nachos. Borracha creates their creamy (and melty!) veganized dishes with Follow Your Heart products, as well as Daiya Cheese.
Can’t get enough vegan cheese? Order the veggie quesadilla to start.
Your dinner options include classic dishes like grilled veggie tacos and chili relleno stuffed with mushrooms and grilled corn, each accompanied by yummy black beans and brown rice.
Borracha’s take on veggie fajitas are served with lettuce cups in place of tortillas, which we are all about because, honestly, we already ate our weight in nachos.
The dish that will keep us coming back? The veggie rice bowl: brown rice, grilled veggies, black beans, guac, and cherry tomato pico mixed with gochujang sauce, topped with sprouts and creamy coleslaw dressing.
But our favorite part about the new vegan menu?
It’s influencing the rest of the menu as well! When Executive Chef Willie Rodriguez was looking to switch things up a bit, he didn’t just take the meat and cheese off his dishes. He played around with ingredients and seasonings that Borracha had never tried before. Because of his vegan experimentation, Borracha’s veggies, rice and beans are even tastier across the board, vegan dish or not. They even found they no longer need to use chicken or beef stock to add flavor to dishes. Veggie stock is now used as standard throughout the restaurant!
FYI: When Vegans, Baby swung by for the tasting, veggie tacos were not listed on the Taco Tuesday menu, however, Chef Rodriguez made a point to clarify that he would be happy to accommodate for his vegan customers.
As for happy hour, we’re happy to report Chef said he will take a look at adding a plant-based option to the Happy Hour menu as well!
