We’ve said it before, but Station Casinos have really upped their game with vegan cuisine in the last few months. That clearly marked V-shaped leaf on their menus makes our hearts flutter … and our stomachs rumble!

Bottiglia Cucina & Enoteca at Green Valley Ranch is yet another Chef Brian Massie spot to add to your list for vegan dining in Las Vegas. This airy and bright Italian restaurant with Tuscan-style cuisine features numerous vegan Italian food and even tops dishes with its own housemade vegan cheeses!

While you’re looking over the menu, it’s cool — you can snack on the bread. It’s vegan. We double-triple checked.

Ease your way into your dinner with the crisp Tomato Salad composed of colorful marinated heirloom tomatoes with aged balsamic and pistachio pesto. This dish is light and refreshing, perfect for sharing.

Bottiglia features four vegan entrees on their menu. Our “must order” dish? The eggplant parm. It’s crispy, not overly cheesy, and baked! This dish alone is worth the trip. While all of Bottiglia’s entrees are great for sharing, this is one of those dishes we wouldn’t blame you for keeping to yourself. 

With three different sauce options, you may have a hard time deciding on a pasta.

Like a thicker tomato base? Order the Spaghetti Bolognese made with chopped chickpeas and topped with almond ricotta.

If you’re in the mood for something rich, the Gnocchi Pesto with zucchini is the dish for you.

Into the classics? You can’t go wrong with the Pasta Pomodoro.

Make sure to check out the multiple vegan sides listed at the bottom of the menu. With side dishes like roasted spaghetti squash with tomato sauce, grilled asparagus, and wood roasted artichokes, even your carb conscious friends will leave satisfied.

We ordered the Crispy Brussel Sprouts with hazelnuts and pomegranate juice. They are delicious with just the right amount of sweetness.

Currently, there are no vegan options for dessert, but to be honest, we didn’t have room for it anyway. Can someone please bring over another plate of bread and roll us home?

Bottiglia offers a limited vegan menu for brunch on Sunday, but we won’t judge you if you’re just there for the morning cocktails and a side of fries. With its bright, welcoming ambience (not to mention pitchers of sangria), what’s not to love? We will be back for brunch soon, but for now, it’s dinner time and we came hungry!
