In what we hope is a growing trend, another Las Vegas steakhouse has launched a vegan menu. Hank’s Fine Steaks & Martinis is the latest steakhouse to skew vegan, and is a part of the changing tide at Green Valley Ranch as more of the restaurants at the property expand their vegan offerings.
The vegan menu at Hank’s is about as good as they get — nearly entirely gluten-free and whole plant based.
Helmed by Executive Chef Doug Zuk, Hank’s Fine Steaks & Martinis launched a vegan menu after noticing an uptick in the number of guests requesting non-steak choices.
“We wanted to be able to comfortably accommodate all the guests’ dietary requests with something more than a plate of steamed veggies of veggie pasta,” he explains.
Zuk is no stranger to vegan cuisine — his daughter went vegan during high school and he rose to the challenge. As did his culinary team when creating the new vegan menu at the Las Vegas steakhouse. They started at the core of recipes and working through non-vegan products, seeking out new products and packing in herbs, spices and new cooking methods to create their new flavor-packed vegan menu.
“It was not very hard for me and my chef team to tap into our skills on this menu, because we love to cook,” says Zuk. “But now we want to take on new challenges like oil free, so stay tuned.”
The menu includes some creative takes on non-vegan dishes like calamari made from mushrooms, as well as savory dishes like the popular quinoa cake with seasonal veggies and romesco — a favorite of Zuk’s. “It has so much flavor and does not lack the uniqueness of a traditional steakhouse item,” he says.
Hank’s new vegan menu is set to rotate every few months.
