POTs, owned by Iman Haggag, is a bright light in the Las Vegas culinary scene. The only Egyptian restaurant in the city, it’s 100 percent vegan. Haggag celebrates her heritage with flavorful dishes and introduces the community to Egyptian street food with crowd favorites like koshari and taamia (Egyptian falafel). Follow POTs on Instagram
Souley Vegan
A ghost kitchen in Las Vegas, Tamearra Dyson brought Souley Vegan’s popular creole vegan concept to Las Vegas summer 2021. Dyson, who famously became the first vegan chef to beat Bobby Flay in January, pays homage to Louisiana with her veganized versions of soul food including Deez Ain’t Gator Bites and the Louisiana Hot Link. Peterson’s Pantry

Serving up pizza and more, Down 2 Earth is a ghost kitchen and a pop-up. Catch Chef Steven Parker at Downtown’s Vegas Test Kitchen every Monday – Wednesday, and then Friday – Saturday out of his ghost kitchen (6235 S. Vintage Vegan Diner
Owners Tay and Tumn have worked non-stop since they opened to make vegan food more accessible with Vintage Vegan Diner. Their homemade vegan turkey sliders have appeared everywhere from the city’s first vegan vending machine (which they launched), to the Farm Stand at Life Is Beautiful.
