The restaurant highlights cuisine from both Italy and Spain, and doesn’t leave out plant-based dishes. In fact, if you’ve been to EDO, you’ll recognize a few of the vegan dishes from their menu.
Helmed by EDO’s executive chef/partner Oscar Amador and chef Francesco Di Caudo from Ferraro’s, you’ll find an array of flavors from the Mediterranean and to as far as Asian influences.

Vegan appetizers at Anima
After settling in with a glass of bubbles, there are a few vegan appetizers to enjoy at Anima.
We’re huge fans of the bravas potatoes. A twist on patatas bravas, these thin, crispy layers of potato are perfectly flavored and come with a brava sauce for dipping. Just let them know you’re vegan.
In addition, other vegan options include oven-roasted celery root in a truffle vinaigrette. It comes to the table in a plastic bag and is sliced open. Once again, let them know you’re vegan.
Plus, there’s the garden veggie app with a chickpea purée, pimentón and herbs.
On the cold appetizer side, EDO’s green tartare makes an appearance on the menu. It’s a light and refreshing dish of zucchini, avocado, and green bell pepper. It’s finished in a pistachio vinaigrette.
You can also order pan con tomate. We adore this fresh bread topped with a crushed tomato and garlic spread.
Vegan tasting menu at Anima
And then there’s the vegan tasting menu at Anima.
The vegan tasting menu is seasonal, so it may vary when you’re there from what we’re sharing.
It starts with farro and haricot vert. The dish features farro tossed with crisp green apples and almond in a cilantro vinaigrette.
Second is the green tartare.
After that is the third course, garden vegetables.
Fourth is the oven-roasted celery root.
Next is tempura maitake mushrooms. Served with a fermented turnip tartar sauce, the mushrooms are lightly battered and fried.
The last savory dish is spinach taglierni. Asparagus and bomba calabrese accompany long, ribbon-thin pasta in this dish.
Finally, dessert is a strawberry granita.
The tasting menu is $60 per person and the entire table must order it.
