Veganuary is the annual month long event to encourage people to try living a vegan lifestyle every January. In 2018, Vegans, Baby launched a vegan dining month to make it easier for people taking the Veganuary challenge to go vegan in January by partnering with restaurants in Las Vegas to offer special vegan menus. 

2020 marks Vegans, Baby’s expansion of its annual vegan dining month to other cities — San Diego and Portland. For the entire month of January restaurants from around Portland (both vegan and vegan-friendly) are offering tasty, creative dishes and donating a portion of the proceeds to Veganuary and the local Out to Pasture Sanctuary. Portland’s Veganuary is brought you by Vegans, Baby and Portland Vegans, an Instagram food blog that posts delicious vegan eats from Portland and surrounding cities, as well as reviews, tips, local events and more things vegan.

Vinter Salad –  “chop salad”-style dish composed of rows of internationally spiced Swedish ingredients:  pomegranate spice-roasted carrots, peppery pickled beets with shaved radish, avocado cucumber capriccio, chopped ågg (house vegan egg made from cashews and chickpeas), dill yogurt dressing – $8

Sunshine Citrus Tart – low-sugar reboot of a former bakery appearance: shortbread crust, cardamom pastry cream, vanilla candied orange and lemon segments/slices –  $8

The Hummerrulle (“Lobster Roll”) – house-made knäckebröd (hardtack) or lettuce cups with oyster mushroom “lobster” salad, arugula, radish, and Swedish pickles – $7

Golden Chai – brewed with black tea, ginger, cardamom, cinnamon, turmeric, black pepper, nutmeg, and cloves, hot or cold – $4

Brazilian Cheesebread – our unique recipe makes being gluten free and vegan easy as pao  – $1.25 per piece or 6 for $6 (add special sauce for $1)

Samba Bowl – a vegan take on the Brazilian stew, Feijoada with stewed black beans, brown rice, roasted peppers, zucchini, onions, and garlic, topped with steamed kale, cabbage, and toasted manioc flour (farofa) – $11 (add avocado for $2)

The Trifecta Bowl – açaí, cacao, and blueberries, with base of signature Carioca blend and topped with cacao nibs, blueberries, homemade creamy cashew butter, banana, and granola  – half –  $9, full –  $12
