Next, the baja taco is a must. Oyster mushrooms are breaded with crispy Panko and come topped with a fresh pico and cilantro.
3. Sweet Potato and Kale Burrito
This monster burrito comes stuffed with sweet potato, rice, beans, blanched kale and avocado. Then, they toss in a creamy pico-jalapeño ranch dressing and fried plantains for a little extra oomph.
4. Brunch All Day Burrito
For a little breakfast action, try the Brunch All Day burrito. It’s filled with a tofu egg scramble, fries, Beyond Meat picadillo and black beans. After that, they add in chipotle mayo, pico and avocado.
5. Crop Chopt Salad
If you want some greens, try this salad. The massive bowl of blanched kale tossed in a lemon vinaigrette comes with beets, crunchy jicama, hemp seeds and avocado.
6. Nugs + Sauce-a
We’re always looking for a good vegan nugget, and Raíz’s are good. They’re using the nuggets from nearby Lily’s vegan grocery. Crispy-on-the-outside and juicy on the inside, you can dunk these bad boys in a creamy chipotle mayo or jalapeño ranch.
7. Crispy Dilla
Finally, there’s the Crispy Dilla. It’s a birria-style quesadilla using that delicate jackfruit with cheddar cheese. Grab this if you want to try something a little different, but definitely delicious.
