It’s only been a year since The Modern Vegan opened its doors in Las Vegas. And, that’s enough time for them to get garner a massive following and expand.
The next city to land The Modern Vegan? San Diego.
“We are really excited to share our food with everyone in California,” says The Modern Vegan owner Gia Schultz. “The support in Vegas from those who travel from Southern California has been incredible.”
The space, located at 4332 30th St., is about 600-square-feet bigger than the Las Vegas location, measuring in at 3,200 square-feet.
“It’s going to be so beautiful,” says Schultz of the new space.

The Modern Vegan San Diego has been more than a year in the making; the lease was signed in February 2018 with construction beginning in November.
With a menu featuring more than 100 items (here are seven dishes you’ve got to try), The Modern Vegan is set to join the ranks of other popular vegan restaurants in the vegan-friendly city, sliding in alongside the likes of comfort food haven Donna Jean, Evolution Fast Food and Cafe Gratitude.

Expect the same experience at The Modern Vegan San Diego, complete with their weekday burgers specials.
As for the future of The Modern Vegan, Schultz plans on opening the popular eatery in bigger cities across the US. Currently, she’s set her sights on New York City and Chicago.
