While Le Cirque has plant-based dishes you can order a la carte, the tasting menu is the way to experience this magnificent restaurant. Note: you’ll need to give the team 48-hours notice to make sure they’ve got everything to create the perfect vegan menu for you.

While dishes can change, the vegan tasting menu at Le Cirque is an eight-course delight for $388 per person.

The vegan tasting menu at Le Cirque starts with Vichyssoise, a creamy chilled soup poured over green peas.

Next, the spring greens salad is served. It comes with delicate Nasturtium flowers, cucumber blooms and asparagus.

Following the salad is a sun cherry tomato goblet. The tomatoes are topped with a tomato gelee, flowering mint and cilantro blossom.

The fourth course is Australian black truffle risotto. The talented culinary team can tweak this rich rice dish so it’s vegan by removing the cheese.

For something a little crispy, next is the artichokes. Crispy artichokes are served with Hunactay leaves. If you hold the Barrigoule beurre blanc, it’s vegan.

The sixth course is a tender ruby red beet with grilled chicory and rye croutons.
