Vegan Appetizers at Tortas Vegas
Always start your meal at Tortas Vegas with the guac. This made-to-order dip pairs perfectly with refreshing Jamaica water – spelled like the island, but pronounced ha-my-ka – made with dried hibiscus petals, sugar and water.

True to the restaurant’s namesake, the tortas are the star of this vegan show.
So, what is a torta? Owner Jorge Manon says it’s an “easy-to-eat, portable sandwich,” dating back as early as the 1500’s in Mexico.
In this modern take, nestled inside a lightly toasted, soft-on-the-inside roll is a perfectly marinated (read: not mushy) medley of zucchini, roasted red peppers and tomatoes in a cilantro pesto sauce with caramelized onions, shaved green cabbage, avocado spread and sweet pickled onions. Chef JC adds raw tomatoes too, for just a little crunch! It’s delightfully complex and comforting. Try it with the smoky sweet chipotle salsa.
“This is what a torta would taste like if you went to Guadalajara or Mexico City today,” says Manon.
The same tasty mix of marinated veggies takes center stage in the enchiladas and tacos, too.
The enchiladas come served with warm corn tortillas, smothered in roasted tomatillo and jalapeño salsa and is topped with Torta Vegas’ signature garnish — sweet pickled red onions.
The tacos, wrapped in flour tortillas, come with your choice of house-made salsas, from mild to whoa, baby!
Everything is made fresh with many dishes incorporating the restaurant’s pink, orange and green color palette — perfect for your Instagram feed. And, coming soon: beer and micheladas. Que bueno!
