Vegan brunch options in Las Vegas expand thanks to the opening of Good Morning
Vegan brunch options in Las Vegas are about to expand on Tuesday, June 22, when Good Morning opens in Southwest Las Vegas.
The new, trendy restaurant features breakfast, brunch and cocktails. Set in a vibrant dining room, the restaurant is a collaboration between Chef John Castro and The Umbrella Consulting Team.
Castro, who has been behind the line at Las Vegas restaurants including Sparrow + Wolf, Sushi Roku and more, has included vegan options on the boozy brunch menu.
Expect vegan dishes including omelettes, benedicts, waffles, soups and sandwiches to accompany the creative cocktail-driven restaurant.
“We wanted to create a space where you can go with a group of friends and no matter what everyone’s dietary restrictions are, there’s something to get excited about. Food has a way of bringing everyone together and right now that’s exactly what the world needs,” he says.
The extensive cocktail menu is created by mixologist Dany Corral. It features bourbon with espresso and coconut, tea cocktails complete with fresh flowers and more.
In addition, Good Morning will offer a Bloody Mary cart to make customized, table side Bloody Marys.
“A lot of breakfast restaurants in Las Vegas seem so rushed and frazzled,” says Dan Simmons of The Umbrella Consulting Team. “We wanted to create an environment where people walk in and immediately feel relaxed. They don’t have to rush through their meal. We want them to stay, enjoy some cocktails and just escape the world for an hour or two.”
