SUSHISamba is a blend of foods and cultures — Japanese, Brazilian and Peruvian — all brought together in a hip venue inside The Palazzo Las Vegas. Rooted in the movement of “a tri-cultural coalition” that formed in the early 20th century when Japanese emigrants planted their feet in South American in Peru and Brazil, SUSHISamba brings these flavors to life.

And, they’ve got a full vegan menu in which they do so. Yes. A. Full. Vegan. Menu.

Executive Chef Joel Versola brings to life dishes like a sizzling Tobanyaki, served piping hot to the table and filled with Japanese mushrooms and seasonal veggies and so much more.

Choose from two appetizers — edamame or grilled shishito peppers covered in sea salt, then be sure to try at least one of the three small plates on the menu (or try them all because they are that good).

We dig the above mentioned Tobanyaki with rich flavors and the Heirloom tomato salad with red onions and cucumbers tossed in a cilantro-jalapeño dressing.

For sushi and rolls, there are plenty to pick from. Our favorite is the Amazônia – a roll filled with portobello mushrooms, takuwan, cucumber, avocado and wasabi-onion soy wrapped in collard greens. SUSHISamba offers the Samba Vegetable Sushi, a platter that includes six of the Amazônia rolls as well as four additional pieces of veggie sushi. Or, order a la carte and try the Umeshisho (made with shisho leaf) or Oshinko (Japenese pickles that are our new favorite thing) rolls.

Add some more color to your meal with grilled eggplant, cherry tomatoes, wild mushrooms or asparagus. Sides include Peruvian corn, silky and creamy coconut rice, collard greens, quinoa and more.

Don’t skip dessert at SUSHISamba, either. The Tapioca Con Leche is insanely good and made with coconut-infused tapioca, toasted coconut tuile and pineapple confit.

The restaurant also offers vegan wines like Cakebread Cellars and sake (order the flight!).
