Plant-Based Menu Innovation is Centerpiece for Sharky’s

Don’t let the fact that Sharky’s Modern Mexican Kitchen isn’t a vegan restaurant fool you. The fast-casual Mexican grill is serious about growing it’s vegan menu.

According to Steve Paperno, founder and CEO of Sharky’s, their plant-based menu innovation is a centerpiece for the restaurants as they “look to expand on the current choices, flavors and cooking techniques.”

Over the years, Sharky’s has gotten more vegan-friendly, taking steps to make the rice, beans, corn and flour tortillas vegan.

“We believe it’s important to fulfill contemporary lifestyle needs with no trade-offs in flavor or satisfaction,” he says. “”We’re always looking to see how we can better satisfy our guests so as the menu evolves, we’ll develop items that meet their changing needs, offering spectrums of health, indulgence and flavor, empowering guests to support their lifestyles of choice.”

The restaurant now has a second location in the Valley (5070 W. Blue Diamond Rd.), opening their doors in the southwest part of the city, meeting the city’s growing demand for vegan-friendly restaurants. The original Las Vegas Sharky’s is located at 8975 W. Charleston Rd.

Sharky’s, which focuses on clean eating and features all-natural, non-GMO ingredients, offers four vegan options.

“We love bringing everyone together to ‘feel good about eating’,” says Paperno, founder and CEO of Sharky’s. “It’s important we provide the modern flavors of Mexico in all of our food including vegan friendly options.”

While the menu is small, it provides a needed option in a part of town that isn’t known for catering much to vegans save for the chains like Jamba Juice and other similar spots.

The chorizo-spiced roasted cauliflower and mushroom tacos, as well as the organic roasted veggie bowl are two of Sharky’s most popular vegan dishes.
