Tacos are not just for Tuesday. While the pandemic may have halted their parties, they didn’t halt the food. With three locations in Las Vegas, we’re stoked Pinches Tacos has a few items they can make vegan. While there are plenty of vegan-friendly restaurants serving tacos, we’re showcasing this one because they plan on making a vegan menu … let’s give them a push to get it done.

Get ready for a dose of color at Pinches. The Gramercy location’s pink walls, skeleton murals and a cool service bay disguised as a food (party) truck make this spot entertaining.
Vegan Options at Pinches Tacos
First, let’s talk comfort food. The warm tortilla soup is a must. Just be sure to specify vegan so they remove the sour cream garnish.
Owner Javiar Anaya promises its “the best tortilla soup you’ll ever have.” And we don’t disagree. This version has a creamy tomato base (instead of chicken broth) with real, handmade tortillas simmered with it.
Now, let’s talk tacos.
When it comes to tacos, Anaya says vegans will still enjoy authentic Mexican flavor — it’s something very important to him.
The veggie taco folds sautéed shiitake mushrooms, tomatoes, bell peppers, onions and salsa verde into a made-to-order flour tortilla. But ask for the vegan version! They’ll remove the slaw and add guac.
We love our cactus here in Vegas, even on a taco! This version mixes soft nopal with onions, cilantro, Serrano chilies, corn, vegan beans and smoky chipotle salsa.
Right now, there are plans to create a vegan menu at Pinches. In the meantime, show ’em some vegan love to make it happen faster!
