Parsley Modern Mediterranean

Craving falafel? Parsley Modern Mediterranean has three locations and is a vegan-friendly restaurant serving (you guessed it) Mediterranean food in Las Vegas.

The family-owned local restaurant features house-made food, made fresh daily and their vegan menu offers a lot of options — nearly all of which are gluten-free, too.

Start your meal with any of the numerous vegan options like cauliflower tahini, seasoned rice, parsley fries or lentil soup.

For the main course, Parsley taps into the build-your-own model, letting you pick your protein (falafel or veggies), then add it to a salad, bowl, plate, white or wheat wrap or French baguette sandwich.

Add in favorites like cucumber, tomatoes, sumac onion, spicy carrots (please add those if you’re a fan of spicy, they’re amazing!), red cabbage or chickpeas to give you a little extra oomph in your meal. Nearly all of the sides at Parsley are vegan, including the hummus, babbaganoush, tabouli, quinoa, grape leaves and eggplant.

You’ll leave Parsley full — bowls and platters all come with salad, seasoned rice and come with tahini and fresh pita bread. They also have vegan baklava … just in case you can squeeze in a little sweet to cap off the meal.
