Munchie Brunchie is a gourmet vegan delivery company in Las Vegas and it’s about to change the way you do weekend brunch.

Not only is the vegan brunch incredibly flavorful and sure to impress even your non-veg friends, it comes thoughtfully packaged, complete with tropical motif-lined boxes.

With bright colors and pink flamingos as their signature motif, Munchie Brunchie is perfect for a picnic in the park or stress-free meal with friends. No need to plate — eat straight from the box.

The concept of this new business came during the closures in March 2020 due to Covid-19 restrictions. Las Vegas local Diego Aguilar decided to chase his dream.

“It took us by surprise,” says Aguilar. “We had a stable life and we lost it in a minute. After sleepless nights and endless days, everything we thought was life, suddenly dissolved. It was time to stop worrying and act.”

Aguilar contacted his best friend and celebrity vegan chef in Mexico City, Natalia Delgado. Aguilar took his knowledge of logistics and management and added Delgado’s passion for creating dishes to birth Munchie Brunchie.

They came up with the idea of a vegan brunch with “great taste, homemade dishes, and with a cause”. For example, the profit from some menu items are donated to local animal shelters.

While Munchie Brunchie is just taking off, here are some of the rotating dishes that will have you dreaming about till the weekend arrives.

Some are perfect for sharing, while others you’re going to want to keep for yourself.

What to for vegan brunch in Las Vegas from Munchie Brunchie

Let’s start with an item you can share for vegan brunch: The Walter Mercado nachos.

These nachos are loaded with black beans, pico de gallo, a yummy potato-base cheese, guacamole, black olives, jalapeños, and a signature, bright pink sour cream. 

Next, grab an order of the Flaming Flamingo tofu wings.

These buffalo style wings are finger-licking-good and come with a homemade dipping sauce. We are loving the texture of these, too. They are perfectly breaded and saucy on the outside, firm and spongy on the inside.

For something a little different, try Munchie Brunchie’s Ceviche Mama’lon. This dish is refreshing, with a kick, and completely unexpected. It’s made of sprouted lentils with pineapple and habanero.

No brunch is complete without a stack of pancakes and the White Rabbit pancakes are the answer to our sweet tooth. These are no ordinary flapjacks — they are carrot cake pancakes with raisins and almonds, drizzled with syrup and coconut cream.

Our hands down favorite vegan brunch item from Munchie Brunchie is the Gordibuena Mexican torta.

You’re sure to have your hands full (mouth, too) with this sandwich. It features a soft, delicious roll filled with breaded zucchini, tomato, lettuce, onion, avocado, mayo, and jalapeños.

For a sandwich with a little less bread, but full of flavor, there’s the No Tuna Arugula made from chickpeas and a special dill sauce.

Finally, there’s the dessert. And booze.

End your meal with Munchie Brunchie’s super creamy non-dairy ice cream (we gobbled up the marzipan artisan) or a spicy Bloody Mary.
