Since April of 2016, the vegan-friendly Me Gusta Tacos has been serving up fresh Mexican food in the heart of The District at Green Valley Ranch. If you’re looking to grab a quick and healthy bite to get you through your Henderson shopping spree, then Me Gusta Tacos is just the spot.
Whether you’re in the mood for a bowl, a salad, a burrito, or tacos, you’ll find vegan and easily veganized options in all categories, along with seasonal agua frescas to wash it all down (in flavors like hibiscus, cantaloupe and strawberry lemonade).
There are some delicious vegan and veganized dishes at Me Gusta Tacos to devour like the black bean salad, a hearty mix of house-made black beans, roasted corn, red bell peppers, and tomatoes, tossed with romaine lettuce, and a vibrant cilantro lime vinaigrette and generously topped with ripe avocado.
You can veganize the Me Gusta Bowl, a quinoa dish featuring red cabbage and roasted corn tossed together with a sweet mango dressing. Finished off with creamy avocado, just ask for it without queso fresco to make it vegan.
The Anthem burrito can also be easily veganized. Roasted squash, black beans, Spanish rice and guacamole are wrapped in a soft tortilla and served with a side of tortilla chips. Ask them to leave off the queso fresco, and you’re good to go.
As their name implies, Me Gusta also has tacos. The vegetarian tacos come piled-high with squash, red bell peppers, and roasted corn. Have them leave off queso fresco and sriracha crema to make them vegan, and ask for them to be topped with avocado instead.
Tacos (served in a set of three) and burritos all come with a side of fresh tortilla chips, which are a perfect way to sample their house-made salsas. The habanero salsa has incredible flavor if you can handle a nine out of 10 heat rating. For the milder set, the salsa roja is only a four. They have a Salsa Verde as well, but it contains honey.
Looking to make a meal out of their sides? Me Gusta Tacos offers vegan Spanish rice and black beans, fresh tortilla chips and homemade guacamole, and even tater tots.
