Jolly Beans Cafe

Inspirada finally has a vegan-friendly restaurant! Jolly Beans Cafe offers select vegan dishes, coffee and tea. For more vegan dining options, visit www.vegansbaby.com/vegansbaby2018

Finally! The southeast part of town has some more vegan options! Say hello to Jolly Beans Cafe, tucked into the master-planned community of Inspirada. With menu items originally created by Rishi Stocks (who you can now find at Joe Maxx) visitors here can indulge their sandwich cravings with grilled sourdough paninis stuffed with vegan mayo, vegan cheese, vegan meats and more.

Most dishes on the menu here that are vegan are knockoffs of non-vegan eats like turkey sandwiches, tofu burgers, breakfast bagels and the like. But, as far as veganized dishes go, this works.

Our pick: the Happy Bird Panini, a sourdough bread sandwich filled with vegan turkey, vegan mayo, vegan cheese and tomato. If you’re feeling really hungry, try the Grateful Gobble with vegan turkey, vegan mayo and vegan cheese with lettuc, tomato and avocado.

Don’t forget to indulge in a coffee, tea or latte, like the matcha mint. Holy yum.
