Here’s the thing about The Guilt Free Glutton: if Chef Stephen Parker wasn’t there with his all-vegan Down 2 Earth Plant-Based residency, they wouldn’t be very vegan-friendly (they’ve got smoothies and one burger regularly). Fortunately, Parker’s Down 2 Earth pop-up inside Guilt Free Glutton makes this spot a vegan-friendly restaurant in Las Vegas.

Parker’s pop-up operates Saturdays, Mondays and Tuesdays from 2 p.m. – 10 p.m. and Sundays from noon to 9 p.m.
Las Vegas Vegan-Friendly Restaurant: The Guilt Free Glutton/ All-Vegan Pop-Up with Down 2 Earth
With generous portions, generous butter and a mix of fried and fresh, Down 2 Earth has a little something for everyone.
Parker pulls out the stops and gives diners the essence of home-cooked meals with a chef’s twist.
Down 2 Earth Appetizers
Perhaps you’ve seen the image of Parker’s fried oyster mushrooms floating on the ‘gram. Well, these fried oyster mushrooms should be on your list to order. Coated in cornstarch and seasoning, these ‘shrooms come with a side of remoulade tartar sauce perfect for dipping.
For a fried-free option, try the herb hummus. This light and creamy hummus comes with grilled veggies (we had asparagus and squash) and grilled sourdough slathered in butter and seasoning.
The pop-up also serves up crispy brussels sprouts, a kale salad and an herb berry salad.
Down 2 Earth Sandwiches
With two sandwiches on the menu, our top pick is the teriyaki tofu sandwich. This sandwich is packed with crispy tofu, cucumbers that pack a punch, avocado, cilantro, jalapeño and a green onion slaw. It’s a mix of refreshing and spicy and we dig it. Bonus: you can get it with fresh potato chips. Yup — they’re still warm when it comes out.
The other sandwich is a massive avocado pesto variety filled with arugula, heirloom tomatoes and sprouts.
If you don’t want chips, there’s also the choice of baked tater tots (!!) or salad.
Down 2 Earth Pizzas
The Las Vegas restaurant serves five vegan pizzas — roasted veggie, margherita, crispy brussles, BBQ ranch and pesto. The pies feature handmade dough and use Follow Your Heart vegan cheese.
We tried the roasted veggie and BBQ Ranch. Our favorite: the BBQ Ranch.
The BBQ Ranch pizza comes topped with BBQ sauce (obvs), as well as chunks of pulled jackfruit, cilantro, red onion and a nice drizzle of homemade coconut ranch.
The roasted veggie pizza is a white pizza and featured a variety of veggies on top of a creamy garlic sauce and light dusting of cheese.
Desserts at Down 2 Earth
If you’re craving something sweet, save room for Parker’s desserts. The homemade chocolate chip walnut cookies are some of the softest, chocolatey-chunked cookies we’ve had.
Take the cookies to-go and try the bean pie. Made from cannellini beans, this thick slice of pie is reminiscent of pumpkin pie in terms of texture and flavor. It’s not too sweet, either which makes it a perfect ending to the heavier dishes on the menu.
