China Poblano Introduces Vegan Tasting Menu

The Mexican/Chinese hot spot helmed by celeb chef José Andrés, China Poblano, at The Cosmopolitan Las Vegas, has added a little something new to its vegan repertoire — an entire vegan tasting menu.

Created in July 2018, The Vegan Chef’s Experience officially started service the beginning of August. For $45 per person, guests are treated to an eight-course tasting menu that isn’t only vegan, it’s also entirely gluten-free.

China Poblano, which offers vegan Mexican and Chinese options on their menu, wanted to step up their vegan game a notch and offer something most restaurants on The Strip don’t offer.

“Vegetables deserve to be the star of the plate,” explains Andrés. “They are so versatile, there are millions of ways to prepare and eat them … to me, vegetables are even sexier than meat.”

The tasting menu starts with light and crispy Arroz Chicharron served with salsa de Jalisco (we dream of buying this and taking it home) followed by a Coconut Ceviche spoon packed with young coconut, avocado, teardrop peppers, red onions and cilantro in citrus juices.

After these light bites, the third course is the Palmitos, a salad made with fresh hearts of palm, grapefruit, orange, avocado and radishes in a tamarind dressing.

The fourth dish is wok-roasted season veggies (we had long beans) with garlic, ginger, arbol chile, almonds and lime — flavors that are sensational together.

After the veggies comes Hongos Tacos with mushrooms, rajas and guac, followed by the oh-so-pretty Liang Fen, a bowl of chilled housemade mungbean noodles with bean sprouts, cucumbers, scallions, peanuts, turnips and borage in a chili sauce.

The main dish is China Poblano’s popular vegan Twenty Vegetable Fried Rice. While we didn’t count the veggies in the rice, we’ll take their word for it

Finally, you get dessert, a scoop of seasonal sorbet.

For an additional $32 per person, guests can also indulge in the China Poblano Cocktail Experience which features four unique cocktails inspired by Mexico and China.
