Why, oh why did we wait so long to sink our teeth into the eats at Bomb Tacos? This vibrant taco shop with two spots in the Valley — on Durango and also the newly opened Downtown location, is our pick for the Best Tacos in Las Vegas in the updated Las Vegas Vegan Food Guide.
The former executive chef of Mingo Kitchen & Lounge, Robert Solano, delivers gourmet tacos and more at Bomb Tacos. For the vegan crowd, there are three tacos to devour: the crispy potato served in a crunchy shell, battered avocado and battered cauliflower. Honestly, we couldn’t choose our favorite so every time we order one of each. They all come topped with lettuce, a dollop of guac and pico de gallo and a side of pinto beans.
If you’re still hungry, order up loaded curly fries topped with guacamole, pico de gallo and mushrooms (just remind ’em it’s vegan).
