Welcome to a new series for World Vegan Month. Each day, I’ll be sharing one of my favorite dishes I’ve had in recent years. From my stomping grounds of Las Vegas to my new spot in New York City, to the places I’ve visited around the world.
So, let’s kick it off with this aglio e olio dish from La Strega. Located in Summerlin, La Strega is helmed by the extremely talented Chef Gina Marinelli.
This light and delicious pasta dish features bucatini noodles tossed in rich Sicilian olive oil. It comes topped with garlic, chili flakes, chives and toasted breadcrumbs. Finally, it’s finished with fresh lemon.
The result?
One of the only pasta dishes I will ever order when dining out. I find that restaurants who have pasta on their menu as an option for vegans take a short cut, but not at La Strega. While there are other delicious options here, like veggie cartoccio and more, this pasta is what vegan dreams are made of.
For a simple, clean dish, it’s loaded with flavor, texture and is one of my favorite vegan dishes in Las Vegas.
