Even though we live in the desert, it’s never too hot for ramen and Las Vegas has a growing number of restaurants serving vegan ramen! Shinya Maru Ramen & Izakaya, located across from the Hard Rock Hotel & Casino opened its doors late spring 2018. With an eclectic interior, menu items inspired by songs (hello, “I Slaw Her Standing There) and incredibly delicious food, it’s no wonder this vegan-friendly spot has been picking up momentum.
Shinya Maru is ran by a man who knows noodles, General Manager Nathan Asamoto. His successful career includes opening some of the top ramen shops in LA. Now, Asamoto is in Vegas and showing what he’s made of.
If you came prepared to eat, definitely order an item or two off the Izakaya menu, like the “Endless Edamame Love” (think edamame and sea salt and a staple app in our world when eating Japanese). Also dig into the aforementioned “I Slaw Her Standing There,” a creamy, slaw-style salad with corn and roasted sesame dressing (oh, that dressing!). If you really want to go hard, order up the vegan “UFO Agedashi Tofu” which is crisped perfectly — just make sure to order the soy sauce instead of the normal dipping sauce it comes with.
But, don’t get too full. There’s still the crowning glory of Shinya Ramen’s vegan options — the (you guessed it) ramen.
The vegan ramen to order is the “In Bloom,” and it comes out piping hot. Shinya’s vegan ramen comes packed with tofu, bean sprouts, green onions, green beans, bamboo shoots, sesame seeds, kikurage (a type of mushroom) and thin noodles. The broth is flavorful but not heavy.
We like it spicy, so we took advantage of the condiments and did it up. If you’re looking to add a little more green to the bowl, you can request kale noodles for an extra $1.
Their locations are in hot beds of vegan growth, situated Downtown and the Hard Rock corridor, a part of Las Vegas that is starting to really come together in terms of vegan options at spots like this as well as Hofbrahaus, Tacos + Beer, Firefly and more. Bonus: they are open late — until 2 a.m. on Friday – Saturday and close at midnight the rest of the week.
