Let’s be real: Las Vegas doesn’t have a whole lot of quick-serve, locally owned healthy spots. Lucky for us, it’s changing thanks to the opening of Lacuna — which means an “unfilled space or gap.”
It’s lived up to its name, filling a void in Henderson (and the Valley) as a new fast-casual restaurant in town to enjoy healthy salads and bowls. Now, you can get healthy vegan food in Henderson.
Located in Henderson off of South Pecos, this bright spot features menu items loaded with punny names (Let the Fun Vegan, lol), modern decor, and fresh local ingredients from businesses like Herbs by Diane and Virgin Cheese.
Although only three of the bowls are listed as vegan, this healthy spot doesn’t mind omitting or swapping ingredients to veganize the other options on the menu.
Choose from either a bowl and ancient grain flatbread wrap made fresh in-house and then go (and oh, so good!) for your meal.
Vegans, Baby Pro Tip: order a bowl and ask for a side of warm flatbread so you’re treated to the best of both worlds.
If you’re craving a bowl with a flavorful punch, Keep Calm and Curry On is the bowl for you. This vegan bowl is a deliciously colorful mix of red quinoa, house greens, rainbow carrots, red cabbage and toasted pecans. The creamy curry dressing is made with Veganaise and the perfect combination for this salad. Want a little extra protein? Add on grilled tofu.
If you’re feeling a veggie vibe, go for the Let the Fun Vegan bowl. This dish includes Port0bello mushroom, baby kale, roasted seasonal vegetables, avocado, cherry tomato, cucumber and Virgin Cheese, all tossed in citrus tea dressing with pumpkin seeds.
They’ve also got the Sweet Siam, a rice noodle bowl with seared, pressed firm tofu, arugula, cucumber, carrots and red cabbage tossed in a sweet peanut sauce. Don’t skimp on the sauce by ordering the dressing on the side. Let them toss it in the noodles for you!
