The all-vegan Las Vegas restaurant Graze Kitchen is officially open. The plant-based Las Vegas restaurant is the latest from John and Tabitha Simmons, the creators of Firefly* and Tacos & Beer.
Graze Kitchen’s birth comes straight from the pandemic. Tabitha discovered Amelia Cooper, who was making meals during the height of the lockdown.
“I’m always on the hunt for amazing food,” says Tabitha of Copper’s creations. “It’s some of the best vegan food I have ever had. It’s really great produce-forward food with lots of flavor.”
She reached out to Copper and asked her what she thought about starting a restaurant. And Graze Kitchen was born with Cooper as a partner.
Located in Southwest Las Vegas, Cooper’s signature style of cuisine sets the tone for the restaurant — charismatic comfort food made by plants.
A self-proclaimed obsessive home-cook, Cooper’s dishes are hearty and vibrant. The menu is free from processed foods and uses housemade proteins and cheeses (except for the Graze board which feature artisanal cheeses).
“We want to have familiar, comforting flavors for those who want all the nostalgia but none of the meat,” explains Cooper.

1. Seasonal Soup
If you’re lucky enough to hit Graze Kitchen when they’ve got their sweet potato bisque, then please order it. This creamy, rich soup includes morsels of crispy tempeh and comes topped with cilantro mirogreens. It’s the coziest bowl of soup we’ve had in ages.
2. Deviled Hummus

The light and fluffy whipped deviled hummus is the stuff of hummus dreams. With a distinct deviled flavor, it comes with a grilled baguette and veggies for dipping. Although, we wouldn’t blame you if you just grabbed yourself heaping spoonfulls of the hummus instead.
3. Firecracker Cauliflower

Another excellent appetizer, the Firecracker Cauliflower features beer-battered cauliflower dipped in panko breadcrumbs and tossed in a sweet and spicy glaze to finish it off.
4. California Bowl
This healthy bowl from Graze isn’t short on exceptional flavors or textures. Cooper’s piled on the Ancient grains and tossed in avocado, tender, jerk soy curls, plus pickled red onions all tossed in a carrot-ginger dressing. It comes topped with sunflowerr seeds and pico for a little extra oomph.
5. Cauli-Chorizo Torta
For something to sink your teeth into, try the Cauli Chorizo Torta. Stuffed inside soft bread is housemade cauliflower chorizo, refried beans, guacamole, lettuce, tomato, pickled red onion and sour cream with a jalapeño-lime dressing.
6. Crab Cakes

Crab cakes are always a must for us, and Graze’s don’t disappoint. Made with hearts of palm, celery, red pepper and onion, these are some of the best in town.
7. Chili Cheese Fries

Graze has two dishes featuring fries, and it’s hard to narrow it down. So, what we’d really suggest is getting both the chimichurri fries and the chili cheese fries. But, if you’re stick to super comfort food, the chili cheese fries are the way to go. They’re topped with homemade cashew queso, pickled red onion, cilantro and sour cream.
